On the Marque
Make no mistake Marque is an exceptional restaurant. The technique, talent and creativity particularly in (but not limited to) the degustation make this the best restaurant in Sydney for our money (and in our humble opinion).

Lobster Broth with Parmesan Custard, Artichoke & Lobster Cracker
Potato Mille-Feuille with Smoked Bonito & Olive 'Truffles', Hazelnut Emulsion
Boudin Noir, Sea Urchin & Purslane
Roast Venison with Carrot Confit, Sweet & Sour Turnips & Bitter Chocolate 'Tart'
Carmelized Tomato stuffed with 12 flavours, star anise ice cream
It's also worth noting that this is one of only a few degustations where every course is truly enhanced by the wine matching.
